ROOT BEER FLOAT CAKE RECIPE

Root Beer Float Cake

A quick and easy cake that resembles a root beer float. Cake mix, root beer and powdered whipped topping mix are used.

Servings: 12

Ingredients

* 1 (18.25 ounce) package white cake mix
* 1 1/4 cups root beer
* 1/4 cup vegetable oil
* 2 eggs
* 1 (1.3 ounce) envelope whipped topping mix
* 1/2 cup root beer

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. In a large bowl, combine cake mix, 1 1/4 cup root beer, oil, and eggs. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
3. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
4. To make the frosting: In a large mixing bowl, combine the whipped topping mix and 1/2 cup root beer. Beat until soft peaks form. Spread on top of cake.

MEDITERRANEAN LINGUINE WITH BASIL AND TOMATOES RECIPE

Mediterranean Linguine with Basil and Tomatoes

Fresh grape tomatoes and basil with lots of extra-virgin olive oil and grated Parmesan cheese bring the fresh tastes of Italy to this quick pasta dinner.

Servings: 8

Ingredients

* 1 (16 ounce) box linguine pasta
* 1 tablespoon salt, or to taste
* 1/2 cup Crisco® 100% Extra Virgin Olive Oil
* 2 pints grape tomatoes, cut in half
* 1 tablespoon minced garlic
* 2 tablespoons red wine vinegar
* 1 teaspoon crushed red pepper flakes
* Salt and pepper to taste
* 18 basil leaves, cut in thin strips
* 3/4 cup grated Parmesan cheese, plus additional for garnish

Directions

1. Heat 6 quarts water to boiling. Add pasta and salt. Cook for the minimum recommended time on package directions. While pasta cooks, prepare sauce.
2. Heat olive oil in large skillet on medium heat. Add tomatoes and garlic. Cook and stir 2 minutes or until tomatoes are soft. Remove from heat. Stir in vinegar and pepper flakes.
3. Drain pasta. Add to skillet. Cook and stir 1 minute or until pasta is coated and hot. Remove from heat. Season with salt and pepper. Stir in basil and cheese. Serve with additional cheese, if desired.

CHOCOLATE AND BUTTERSCOTCH FUDGE RECIPE

Chocolate and Butterscotch Fudge

This creamy chocolate fudge with a rich butterscotch topping is an excellent addition to your any dessert tray.

Servings: 32

Ingredients

* 2 cups semi-sweet chocolate chips
* 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
* 1/2 cup chopped walnuts (optional)
* 1 teaspoon vanilla extract
* 1 cup butterscotch chips

Directions

1. In heavy saucepan, over low heat, melt chocolate chips with 1 cup sweetened condensed milk. Remove from heat; stir in nuts (optional) and vanilla. Spread evenly into wax-paper-lined 8- or 9-inch square pan.
2. In clean heavy saucepan, over low heat, melt butterscotch chips and remaining sweetened condensed milk. Spread evenly over chocolate layer.
3. Chill 3 hours or until firm. Turn fudge onto cutting board; peel off paper and cut into squares. Store leftovers covered in refrigerator.

THE BIG EASY JAMBALAYA RECIPE

The Big Easy Jambalaya
This flavorful dish is perfect for a Mardi Gras party, and it really is 'big easy.' The recipe can be easily doubled to serve 16 by using 2 packages of Jambalaya Mix, doubling all the other ingredients and cooking in a Dutch oven or sauce pot.

Servings: 8

Ingredients

* 1 tablespoon olive oil
* 1 medium onion, chopped
* 1 medium green bell pepper, chopped
* 1 medium yellow bell pepper, chopped
* 1 (14.5 ounce) can fire roasted or regular diced tomatoes, undrained
* 1 cup water
* 1 (8 ounce) package ZATARAIN'S® Reduced Sodium Jambalaya Mix
* 1 pound large shrimp, peeled and deveined
* 1 (12 ounce) package andouille sausage, cut into 1/4-inch slices
* 1/4 cup chopped fresh parsley (optional)

Directions

1. Heat oil in large deep skillet or 5-quart Dutch oven on medium heat. Add onion and bell peppers; cook and stir 7 minutes or until vegetables begin to soften.
2. Stir in tomatoes, water and Jambalaya Mix. Bring to boil. Reduce heat to medium-low; cover and simmer 15 minutes.
3. Stir in shrimp and sausage. Cover and cook 10 minutes longer or just until shrimp turn pink and rice and vegetables are tender, stirring occasionally. Remove from heat. Let stand 5 minutes. Sprinkle with parsley, if desired.
